Button mushrooms are the most-grown mushroom on the planet, and the good news for home gardeners is that they are also one of the most forgiving to grow yourself. They do not need sunlight, they do not need a garden bed, and they will happily fruit in a cool basement, garage, or spare closet while everything outside is frozen. With a little patience and clean hands, you can pull fresh, firm mushrooms out of a tray on your own schedule for weeks.
There is one fact that clears up most of the confusion before you even start: white button, cremini (also spelled crimini, or sold as “baby bella”), and portobello mushrooms are all the exact same species, Agaricus bisporus. They are not three different crops you have to choose between. White buttons are simply young mushrooms of a white-bred strain; creminis are the same mushroom from a brown-bred strain harvested a little later; and a portobello is just a cremini left to open up fully and grow large. When you grow Agaricus bisporus at home, you decide which one you are harvesting by choosing your spawn strain and picking your timing. That single idea makes the whole project far less intimidating.
What you need to grow button mushrooms at home
Growing button mushrooms is indoor, sheltered cultivation, not a garden-bed crop you sow outside. Agaricus bisporus is a secondary decomposer: unlike oyster mushrooms that eat raw wood, it cannot digest fresh straw or sawdust. It feeds on material that has already been partly broken down by microbes, which is why composted manure is the classic substrate and why the from-scratch route involves a composting step.
Before you start, gather the basics:
- A growing container at least 6 inches deep with a wide surface area. A wooden box, a plastic tote, or a sturdy lined cardboard box around 14 by 16 inches all work. More surface area means more mushrooms.
- A cool, dark, draft-free spot you can keep around 55 to 75 F at different stages. Basements, crawl spaces, garages, and closets are favorites.
- Mushroom spawn (the living culture, sold on grain or sawdust) from a reputable supplier. This replaces seeds.
- A substrate: either a bag of composted manure (cow or horse) blended with compost, or the ingredients to compost your own.
- Casing material: peat moss plus a little lime or chalk to raise the pH.
- A spray bottle or mister, plastic sheeting or wet newspaper to hold humidity, and a basic thermometer. A cheap humidity gauge helps but is not essential.
Cleanliness matters more than any single piece of equipment. Button mushrooms grow slowly compared to molds, so anything you can do to keep competing spores out, washing hands and tools, working in a tidy area, will pay off later.
The easiest route is a ready-made grow kit
If this is your first time, buy a kit. A button mushroom kit comes as a block or tub of substrate that has already been composted, pasteurized, and inoculated with spawn for you, often with a bag of casing mix included. All the hardest and most failure-prone steps, sourcing manure, composting it correctly, pasteurizing it, and inoculating cleanly, are done in a lab or commercial facility.
With a kit, your job is simple: keep it in the right temperature range, add the casing layer when the instructions say to, mist to keep it damp, and wait. Kits cost more per mushroom than doing it from scratch, but they dramatically raise your odds of success and teach you what healthy mycelium, pinning, and fruiting actually look like. Once you have seen a kit through one full cycle, the from-scratch method makes a lot more sense.
Growing button mushrooms from scratch
Doing it yourself is cheaper per pound and genuinely satisfying. It also takes more attention, because you are now responsible for the steps the kit handled. Here is the full sequence.
Prepare and pasteurize the substrate
The substrate for Agaricus bisporus is composted manure, traditionally horse or cow manure mixed with straw, plus a little gypsum to keep the texture open and balance the pH. If you do not have access to manure, equal parts bagged composted manure and finished compost is a workable substitute.
Composting is what turns raw straw and manure into food the mushroom can use. In a pile outdoors, wet the straw thoroughly, mix in the manure and gypsum, and let it heat up. Turn the pile every few days for about two weeks. Done right, it climbs to roughly 140 to 160 F internally, turns dark chocolate brown, and ends up smelling sweet and earthy rather than sharp with ammonia. Agaricus will not colonize compost that still reeks of ammonia, so let that smell fully dissipate.
After composting, the material must be pasteurized to wipe out insects, nematodes, and competing molds without sterilizing it completely. Holding the substrate at about 140 F for roughly two hours does this. Pasteurization, not full sterilization, is the goal here: you want to leave the beneficial bacteria that finish consuming any leftover ammonia. Bagged composted manure from a garden center has usually been heat-treated already, which is one reason beginners often start there.
Inoculate with spawn and run the spawn
Once the substrate has cooled below about 80 F, mix in your grain or sawdust spawn. Spawn warmer than that risks cooking the mycelium, so be patient and check with a thermometer. Distribute it evenly, either by mixing it thoroughly through the substrate or by layering it, then fill your container to a depth of about 3 to 6 inches and firm it gently.
Now comes the spawn-run, the colonization phase. Keep the container warm and dark, around 70 to 75 F, and hold the surface damp but never soggy. Cover with plastic or a few layers of wet newspaper to lock in humidity. Over the next two to three weeks the white, thread-like mycelium spreads through the substrate until the whole surface looks like it has been dusted with cobwebby white growth. When the substrate is fully colonized, white throughout, with no green, black, or slimy patches and no foul smell, you are ready for the step that actually makes mushrooms appear.
Add the casing layer, the trigger for fruiting
This is the step beginners most often skip, and it is the single most important one. Button mushrooms will almost never fruit on bare compost no matter how well colonized it is. They need a casing layer: a moist, non-nutritive covering spread over the colonized substrate. The casing does not feed the mushrooms. Instead it holds water, supports the developing mushrooms, and creates the micro-conditions that flip the fungus from spreading mode into fruiting mode.
A reliable casing is a mix of peat moss with enough lime or chalk to bring the pH up to around 7.5. Peat on its own is acidic, and mushrooms dislike acid, so the lime is not optional. Some growers add vermiculite or coir for extra moisture-holding. Spread a uniform 1 to 2 inch layer over the colonized surface, level it gently without packing it down, and mist it until it is evenly damp. Keep the casing moist from here on; it is your moisture reservoir.
Drop the temperature and let it pin
After casing, the mycelium climbs up into the new layer over about five to seven days. Once you see white strands threading into the casing surface, it is time to signal the fungus that the season has changed. Drop the temperature into the fruiting range, roughly 55 to 65 F, and increase fresh air. In nature this temperature drop and the clearing of stale air mimics autumn, which is the cue Agaricus uses to fruit. Growers sometimes call this the “autumn shock,” and it triggers pinning.
Pins are the tiny pinhead-sized white buds that appear scattered across the casing. They are the start of your mushrooms. Within roughly the next week, each pin swells into a recognizable button.
Fruiting conditions that make or break your crop
Once pinning starts, four conditions determine whether you get a heavy crop of firm mushrooms or a disappointing handful of stringy ones.
- Temperature: keep it cool and steady, around 55 to 65 F. Warmth speeds the spawn-run but works against good fruiting.
- Humidity: high, around 80 to 95 percent. The casing and the air both need to stay damp so pins do not dry out and abort.
- Fresh air: developing mushrooms breathe, and they exhale carbon dioxide. In a closed container CO2 builds up, which produces long, spindly stems and tiny caps. Fan the area or crack the cover daily to clear that stale air. This is the most common reason home crops look “leggy.”
- Darkness: button mushrooms do not need light to fruit. Low light or full dark is fine; bright light is unnecessary and can dry things out.
Watering and misting
Mist with a spray bottle to keep the casing and surface damp, checking daily. The cardinal rule is to mist, never pour. Dumping water onto the casing creates soggy dead spots that rot pins and invite contamination, and it can drown the mycelium. A light, frequent misting that keeps everything evenly moist, like a wrung-out sponge, is exactly right. If your air is dry, a tent of plastic with a few air holes helps hold humidity between mistings.
Harvesting button mushrooms at the stage you want
Here is where the same-species fact becomes practical. Because white button, cremini, and portobello are all Agaricus bisporus at different ages, you choose what you harvest by choosing when you harvest.
- Pick at the button stage, while caps are still firmly closed and the gills underneath are hidden by the veil, for classic small white (or small brown) mushrooms.
- Leave them a day or two longer, until the cap starts to open and the gills just begin to show, for cremini-style mushrooms with a meatier texture.
- Let a brown strain keep growing, open fully, and broaden to several inches across, and you have a portobello.
Mushrooms can roughly double in size every day near the end, so the difference between a button and a portobello is often just a matter of days. To harvest, grasp the mushroom low on the stem and gently twist and pull it free of the casing. Twisting is preferred over cutting because a cut stem left in the casing can rot and attract pests. If you do cut, use a clean knife right at the base. After picking, fill any holes left behind with a little fresh casing and mist lightly.
Yield, timeline, and multiple flushes
Mushrooms come in waves called flushes. After the first flush slows down, rest the bed, keep it damp, and a second flush typically appears about a week or two later, followed sometimes by a third. Each successive flush is usually a bit smaller than the last. A well-run home bed will keep producing across several flushes over roughly three to six months before the substrate is exhausted.
As a rough timeline from a scratch setup: about two weeks to compost, two to three weeks for the spawn-run, five to seven days after casing to see pins, and another week or so for those pins to reach harvest size, so figure on roughly five to eight weeks from inoculation to your first mushrooms, then repeat flushes after that. A kit skips the composting and spawn-run, so it can fruit in as little as two to three weeks.
Storing your harvest
Do not wash mushrooms right after picking. Brush off any clinging casing or soil with a soft brush or cloth, and trim the stem ends if needed. For the fridge, store them in a paper bag or a perforated container at around 36 to 41 F; the breathable packaging lets them shed moisture instead of going slimy. Never seal fresh mushrooms in airtight plastic, where they sweat and spoil within a day or two. Stored this way they keep about a week.
For longer storage, slice and saute or blanch them briefly before freezing, since raw mushrooms freeze poorly and turn mushy. They also dry beautifully: slice thin, dehydrate or air-dry until crisp, and keep in an airtight jar in a cool dark cupboard, then rehydrate in warm water when you cook.
The food-safety rule you must not skip
This is the part no shortcut covers, and it matters more than yield. Grow only from known, purchased spawn of a cultivated strain, and never confuse the mushrooms you cultivate with wild lookalikes.
Agaricus bisporus has wild relatives, and the genus as a whole is easy to mistake for some genuinely dangerous fungi. Young white button mushrooms in particular can superficially resemble the button stage of deadly Amanita species, such as the death cap and the destroying angel, whose toxins cause fatal liver failure and have no reliable home antidote. The whole point of growing from commercial spawn is that you know with certainty what you are growing, because identity is guaranteed at the source. Eat what you cultivated from that known spawn. Do not let foraged mushrooms, or any mushroom you cannot positively identify, end up in the same basket or on the same plate, and never eat a wild Agaricus-looking mushroom on the assumption that it must be the same thing you are growing. When there is any doubt at all about a mushroom’s identity, the only safe choice is to throw it out.
Putting spent substrate to work in the garden
When your bed finally stops producing, do not bin it. Spent mushroom substrate is essentially partly composted manure that has been worked over by fungal mycelium, and it is excellent organic matter. Mix it into vegetable beds, dig it into heavy or sandy soil to improve structure, or add it to your compost pile to finish breaking down. It tends to be on the alkaline side from the casing lime and can carry some salts, so use it as an amendment blended through soil rather than as a standalone potting mix, and go lighter around acid-loving plants like blueberries. For most vegetable gardens it is a free soil booster that closes the loop on your grow.
Common problems and how to fix them
Even careful growers hit snags. Catching them early is the difference between losing a few mushrooms and losing the whole bed.
- Green mold (Trichoderma or Aspergillus): patches of green, dusty fuzz on the compost or casing are the most common contamination, almost always traced to under-pasteurized substrate or poor sanitation. Remove affected areas immediately, improve airflow, stop overwatering, and start cleaner next time with properly pasteurized substrate and clean tools.
- Cobweb mold (Dactylium and relatives): a grey-to-white, fluffy, fast-spreading growth that looks like mycelium but hovers above the surface in wispy three-dimensional tufts and can cover a penny-sized patch into a whole tray in a day or two. Left alone it aborts pins and rots mushrooms. Catch it early, dab the spot with a 3 percent hydrogen peroxide solution, which knocks back cobweb without harming healthy mushroom mycelium, and cut back on humidity and standing water.
- Dry, stunted, or aborted pins: pins that shrivel or never size up usually mean the casing dried out or the air is too dry, so mist more consistently and keep humidity up. Pins that stall completely can also signal that the bed is too warm or the casing pH is too low, so move it somewhere cooler and check that you limed the casing.
- Long stems and tiny caps: this leggy, “bean-sprout” look is the classic sign of too much carbon dioxide and not enough fresh air. Fan the bed more often or open the cover, and the next pins will come in stockier.
- Flies, fungus gnats, and mites: small flies laying eggs in damp substrate produce maggots that tunnel through mushrooms, and they also ferry mold spores around. Keep the area clean, remove old or rotting mushrooms and spent stems promptly, hang yellow sticky traps to catch adult flies, and avoid letting the substrate sit soggy.
Most failures trace back to the same three causes, contaminated or under-pasteurized substrate, too little fresh air, or watering by pouring instead of misting. Tighten up those three habits and a home button mushroom bed will reward you with flush after flush of mushrooms you grew yourself, picked at exactly the stage you wanted, with the confidence of knowing precisely what is on your plate.
