The turnip is one of the most forgiving vegetables you can grow from seed, and one of the most rewarding for the small amount of space it asks for. Sow a pinch of seed in cool weather and, within a month, you are pulling crisp white roots with shoulders that push up out of the soil to tell you exactly when they are ready. Better still, you get two harvests from one planting: peppery greens for the salad bowl and sweet, nutty roots for roasting. This guide walks you through every stage of growing turnips (Brassica rapa subsp. rapa), from choosing a spring or fall crop to thinning, harvesting both roots and tops, and storing the surplus so it keeps for months.
Turnips are a fast, cool-season root crop you sow straight in the ground
A turnip is a hardy biennial in the cabbage family (Brassicaceae) that almost everyone grows as a quick annual. It forms a rosette of bright green, slightly bristly leaves above a swollen taproot that can be white, gold, or red, usually with purple or green shoulders where the top of the root has been exposed to sunlight. The flesh inside is typically white and crisp.
What makes turnips so easy is their speed. Many varieties go from seed to a usable root in 30 to 60 days, and the salad-size greens are ready even sooner. Because the roots resent being moved, you sow turnips directly where they will grow rather than starting them indoors as transplants. They thrive in full sun, in loose soil enriched with compost, and they sail through the cool shoulder seasons of spring and fall that frustrate heat-loving crops like tomatoes and peppers.
A quick word on a common point of confusion: turnips are not rutabagas. Both belong to the brassica family and taste similar, but the rutabaga is a different species (Brassica napus), grows larger, has dense yellow flesh, and needs a much longer season to mature into a fall and winter crop. Turnips are smaller, faster, mostly white-fleshed, and tender enough to eat raw. If you want both quick roots now and big storage roots later, grow them side by side, but treat them as two different crops with two different timetables.
Spring or fall, turnips reward cool weather and punish heat
Turnips grow best when daytime temperatures sit between roughly 40 and 75 degrees Fahrenheit, with the sweetest, most tender roots forming around 60 to 65 degrees. Push them into hot summer weather and the roots turn woody, sharp, and fibrous while the plants are tempted to bolt (send up a flower stalk) instead of fattening their roots. That single fact is what drives the entire planting calendar.
For a late-spring harvest, direct sow about two to three weeks before your average last frost date, as soon as the soil reaches at least 40 degrees and can be worked. Spring crops are wonderful because they come fast, but they carry one risk: a sudden heat spell or a long cold check early on can trigger premature bolting. If your spring warms up quickly, choose a fast, bolt-resistant variety and get the seed in early. To stretch the season, sow a fresh short row every two to three weeks until temperatures climb toward the mid-70s.
The fall crop is, for most gardeners, the better one. Sow in late summer to early autumn, roughly six to nine weeks before your first expected frost, timing the planting so the roots swell as the weather cools rather than as it heats. A fall crop has three real advantages over spring: the roots mature into falling temperatures and turn noticeably sweeter, pest pressure is far lower than in late spring, and there is no race against summer heat. A few light frosts actually improve flavor, as cold prompts the plant to convert starches to sugars. In mild-winter regions you can sow even later and overwinter the crop under mulch for harvests that stretch toward spring.
To keep yourself in turnips without a glut, plant successively: a short row every couple of weeks within each window rather than one big sowing. Five to ten plants per person at a time is a sensible amount, since young roots are best eaten fresh.
Loose, compost-rich soil free of stones gives you smooth, mild roots
Turnips form their roots within the top few inches of soil, so the texture of that layer decides the shape and flavor of your harvest. Aim for loose, well-draining ground worked to a depth of about eight to twelve inches and free of rocks, clods, and clumps that force a root to fork or twist. Mix in two to four inches of garden compost or well-rotted manure before sowing. Avoid fresh manure: the rush of available nitrogen encourages leafy top growth and branched roots, and it can introduce weed seeds and harmful bacteria.
Turnips prefer a slightly acidic to neutral soil, in the range of about pH 6.0 to 7.5. If your soil is heavy clay, lighten it with aged compost so roots can expand freely; if it is fast-draining sand, the extra organic matter helps hold the steady moisture turnips need. In most well-prepared beds you will not need much fertilizer. If you do feed, reach for a balanced, low-nitrogen mix rather than a high-nitrogen one, which would give you lush tops at the expense of the roots. Skip any “weed and feed” product, as the herbicide in it will damage your crop.
To sow, make a shallow furrow a quarter to a half inch deep, scatter or space the small seeds along it, and draw the soil back over them. Cover with no more than half an inch of soil and water gently so you do not wash the tiny seeds out of place. If you are sowing several rows, set them about 12 to 24 inches apart so you have room to work and the plants have airflow. Seeds are not fussy: they germinate quickly, often within a week, sometimes in as little as three days in warm soil.
Thinning is the single step that decides whether your roots are worth eating
More turnip crops are ruined by crowding than by anything else, and the cure costs nothing. Sown thickly, seedlings compete for space, light, and water, and the result is a tangle of leaves over a row of pencil-thin, malformed roots. A root simply cannot fatten if there is no room around it.
Begin thinning once the seedlings stand a few inches tall and the first true leaves have appeared. Reduce them to about four to six inches apart for full-size roots, or a tighter two to three inches apart if you are growing mainly for greens and small roots. To avoid disturbing the keepers, either pinch unwanted seedlings off at soil level with your fingers or snip them with scissors rather than yanking them, which can tear neighboring roots loose. Pull weeds at the same time, since they compete just as fiercely.
Here is the part most gardeners overlook: do not throw the thinnings away. Those young seedlings and their leaves are tender, mild microgreens that go straight into a salad. In effect, thinning is your first harvest, weeks before the roots are ready. It is the rare garden chore that feeds you on the spot while making the rest of the crop better.
Steady moisture, light cultivation, and a mulch are nearly all the care turnips need
Turnips have a modest root system for taking up water, so even though the storage root is large, the plant cannot reach deep for moisture. Give the bed about one inch of water per week from rain or irrigation, and more often if your soil is sandy and drains quickly. Consistency matters more than volume: it is steady moisture that keeps growth fast and the roots mild and sweet. Let the soil dry out and growth stalls, after which roots commonly turn tough, woody, and strong-flavored. When you water, soak the soil thoroughly to encourage roots to develop downward, and water at the base of the plants rather than overhead so the leaves stay dry and less prone to fungal disease.
Keep the bed weed-free, but cultivate shallowly. Because turnip roots sit so close to the surface, deep hoeing slices into them. Skim just below the soil surface to cut weeds off, and take care near the plants. A three- to four-inch layer of weed-free straw or herbicide-free grass clippings does most of this work for you: mulch conserves moisture, smothers weeds, keeps the soil cool, and shades the exposed root shoulders so they do not get sunscald. In cold weather a thick mulch also buffers the roots against frost, letting you leave them in the ground longer.
Fertilizing is rarely necessary if you prepared the bed with compost, because the crop grows and finishes so fast. If a row looks pale or sluggish, a light side-dressing of compost at midseason is plenty. Resist the urge to push nitrogen, which trades roots for leaves.
Cabbage-family pests find turnips, but row cover and rotation keep them in check
As a brassica, the turnip attracts the same cast of pests that visit cabbage, kale, and broccoli, though it is often a secondary target when those crops are nearby. The most damaging tend to be:
- Flea beetles, which chew dozens of tiny shotgun holes in the leaves, especially in warm, dry spells. Keeping the soil moist and dusting leaves with diatomaceous earth helps; heavy infestations are worse on stressed plants.
- Cabbage root maggots, the larvae of a small fly that lays eggs at the base of the plant; the grubs tunnel into the roots and cause plants to wilt and collapse. Cover seedlings with floating row cover so the flies cannot reach the soil, and sow when conditions are drier.
- Aphids, which cluster on leaves and undersides, sucking sap and leaving sticky honeydew. Blast them off with a jet of water, spray with insecticidal soap, or invite ladybugs and lacewings into the garden.
- Caterpillars of cabbage loopers, imported cabbage worms, and diamondback moths, which eat ragged holes in the leaves. Handpick them or treat with Bacillus thuringiensis (Bt).
- Cutworms, which sever young seedlings at the soil line overnight; a simple cardboard or paper collar around each stem stops them.
The most effective defense is also the simplest: install floating row cover on the day you sow and leave it on. It physically excludes the moths, flies, and beetles that do the damage, and because turnips do not need insect pollination to form roots, you lose nothing by keeping them covered.
On the disease side, turnips can pick up the usual brassica troubles, including clubroot (galled, stunted roots and yellow, collapsing tops), black rot or blackleg (yellow, V-shaped lesions on leaf edges and dark rot in the roots), downy mildew, and various leaf spots such as Alternaria. The strategy for all of them is the same and it is preventive: rotate your brassicas so you do not grow any cabbage-family crop, turnip included, in the same spot for three to four years; plant in well-drained soil; keep the bed clean of debris; and lift and bin (do not compost) any plant that shows clubroot or rot, since clubroot spores can persist in the soil for seven years or more.
You can harvest greens and roots from the same plants, if you cut the leaves only once
One of the quiet pleasures of growing turnips is that the crop feeds you twice. The greens are ready long before the roots, and because the root shoulders push above the soil line, the plant tells you when the roots are ready without your having to dig.
For greens, start cutting once the leaves are a usable size, roughly four inches and up. The trick is restraint. The leaves are the plant’s solar panels, and every leaf you remove slows root development. If you want both a leaf harvest and a decent root from the same plant, take only the outer leaves and leave the central growing point and inner leaves intact, which lets the plant keep fueling the root and may even let you cut again later. Plants grown purely for greens can be cut more freely and will often resprout from the center for a cut-and-come-again supply.
For roots, the sweet spot is small. Most turnips are at their best when the root is about two to three inches across, roughly golf-ball to tennis-ball size, when the flesh is crisp, mild, and tender. You can watch the swelling shoulders to judge size before you pull. Loosen the soil beside the plant with a fork to make lifting easy, then ease the root out. Do not leave roots in the ground past maturity chasing size: once they grow past three inches or so, they tend to turn woody, fibrous, and harshly flavored. If hot weather is closing in on a spring crop, taste a root every day or two and pull the whole row before the flavor goes.
Timing the fall harvest is its own small art. Leave the roots in the ground through the first few light frosts, which sweeten them, but lift them before a hard freeze. The plants can survive repeated freezing, but the roots cannot: repeated freeze-and-thaw cycles crack the flesh and invite rot. In mild regions, a thick straw mulch lets you leave roots in the soil and harvest them as needed well into winter.
Storing turnips well means keeping roots and greens apart and cold
How you store turnips depends entirely on how long you need them to last, and the first rule applies to every method: separate the greens from the roots as soon as you harvest. Left attached, the leaves keep pulling moisture out of the root, shrinking and softening it within days. Twist or cut the tops off (and trim the long thin taproot for long storage), then store the two parts separately.
For short-term storage, the refrigerator is ideal. Unwashed roots in a perforated or loosely closed plastic bag hold their quality for about one to two weeks, sometimes up to three; turnips lose moisture quickly, so the bag matters. The greens are more perishable still: wrap them in a damp towel inside a bag and use them within a few days to a week.
For long-term storage, treat turnips like any storage root and aim for cold and humid. A root cellar or an unheated garage held at about 32 to 40 degrees Fahrenheit with high humidity, on the order of 90 to 95 percent, will keep topped roots in good shape for several months, often four to five. Pack them in damp sand or sawdust if the air is dry, and check periodically, discarding any that soften. Roots from a relatively dry growing season store better than those grown in a wet one. In a frost-free, mild-winter garden, the simplest “storage” of all is to leave the roots in the ground under a heavy mulch and dig them as you need them. Whichever route you choose, delaying the harvest as long as the weather safely allows is one more way to extend how long your turnips last.
In the kitchen, turnips swing from peppery-crisp to sweet and nutty
A turnip is really two vegetables in one, and knowing how its flavor shifts tells you how to use it. Raw, a young root is crunchy and juicy with a clean, peppery, faintly radish-like bite; grate it into a slaw, slice it thin into a salad, or cut it into sticks for dipping. Cooked, that pepperiness mellows completely and the root turns sweet, nutty, and earthy. Roasting in particular concentrates the sugars and brings out the best in a turnip, but it also takes beautifully to boiling, steaming, mashing, frying, and simmering into a velvety soup with onion and a little broth. Treat it much as you would a carrot or potato: small turnips can be cooked whole, while larger ones are best halved or sliced first. Cool-weather roots, especially fall and post-frost ones, are the sweetest of all.
Do not overlook the greens, which are a crop in their own right. Their flavor is earthy and peppery with a mild bitterness that cooking tames, so steam, saute, or simmer them as you would any hearty green, fold them into soups and stir-fries, or use the youngest leaves raw in salads. Nutritionally they earn their place: turnip greens are loaded with vitamins A, C, and K plus calcium and fiber, and the roots add vitamin C, potassium, and fiber for very few calories. As cruciferous vegetables, both root and leaf belong to the same nutrient-dense family as broccoli and cabbage, which makes a single, easy-to-grow turnip planting one of the better returns on a small patch of cool-season garden.
