Few native trees pack as much personality into one specimen as sassafras (Sassafras albidum). A single branch can hold three completely different leaf shapes — a plain oval, a two-lobed mitten, and a three-lobed “dinosaur footprint” — and every part of the plant, from twig to root, smells faintly of citrus and root beer when you scratch it. Come autumn, that quirky foliage erupts into some of the most reliable orange, scarlet, gold, and purple color in the eastern forest. How to identify a sassafras tree

The three leaf shapes are the giveaway
Sassafras has polymorphic (variable) leaves, which means a single tree — sometimes a single twig — carries leaves in three distinct shapes:
- Unlobed: a simple oval or egg-shaped leaf with no lobes.
- Mitten-shaped (bifoliate): two lobes, with one “thumb” off to the side, exactly like a mitten.
- Three-lobed (trifoliate): three rounded lobes, often described as looking like a small dinosaur footprint or a ghost.
The leaves are alternate, bright to yellow-green, and roughly 3 to 7 inches long. Three-lobed leaves tend to be the most common, but you’ll find all three forms scattered through the canopy. Very rarely a leaf shows more than three lobes. No other common eastern tree mixes these shapes on the same plant, so a branch carrying ovals, mittens, and three-lobed leaves together is essentially a positive ID.
Crush a leaf or scratch a twig — it should smell spicy
Every part of sassafras is aromatic. Crush a leaf or snap a young green twig and you’ll get a warm, citrusy, root-beer-and-lemon scent. This single test separates sassafras from look-alikes such as young red mulberry, which can also produce mitten-shaped leaves but lacks the fragrance. If there’s no spicy smell, it isn’t sassafras.
Bark, flowers, and fruit confirm it
On young stems the bark is smooth and bright yellow-green, often with a reddish cast. As the tree matures the bark thickens into corky, deeply furrowed reddish-brown to gray ridges — older trunks are sometimes compared to alligator hide. In early spring, before or just as the leaves emerge, sassafras produces small, fragrant, yellow to greenish-yellow flowers in loose drooping clusters.
Sassafras is usually dioecious, meaning male and female flowers grow on separate trees. Only pollinated female trees set fruit: small, shiny, dark blue-black drupes (about 1/3 inch) sitting in bright red, club-shaped cups on red stalks. The contrast of blue fruit against red stems in late summer is striking — and, practically speaking, it means you need at least one male and one female tree nearby if you want berries.
Where sassafras grows and how big it gets
Sassafras albidum is native to eastern North America, ranging from southern Maine and southern Ontario west to Iowa and south to central Florida and eastern Texas. It’s a common pioneer of open woodlands, forest edges, old fields, fencerows, and roadsides — anywhere it can claim disturbed ground in good light. In the wild you’ll often see it alongside flowering dogwood, eastern red cedar, beech, and sugar maple.
It is hardy in USDA zones 4 through 9 and tolerates winter lows around -30°F. As a single-trunked tree in the open it typically reaches 30 to 60 feet tall and 25 to 40 feet wide, with a somewhat irregular, layered, often flat-topped or pyramidal crown; exceptional specimens have topped 75 feet. In a tight landscape it more often behaves like a large multi-stemmed shrub because of its suckering habit, which is covered below. Growth is fast, especially from root sprouts, so you won’t wait long for size.
How to grow and care for sassafras
Sassafras is genuinely low-maintenance once it’s in the right spot. The two things it cares about most are sunlight and drainage; almost everything else it handles on its own.
Light: full sun for the best color and form
Plant sassafras in full sun to partial shade. Seedlings tolerate shade, but saplings and mature trees demand sunlight for dense foliage, good structure, and reliable flowering. If brilliant fall color is your goal — and for most people it’s the whole point — give the tree at least six hours of direct sun. Trees grown in too much shade stretch, thin out, and color poorly.
Soil: well-drained and slightly acidic is ideal
Sassafras prefers rich, well-drained sandy loam with a slightly acidic pH around 6 to 7, but it’s adaptable and will grow in clay, sand, loam, and alkaline or dry sites once established. The non-negotiable is drainage. The fleshy taproot is prone to rot in soggy, waterlogged ground, so avoid low spots where water sits. A darkened band at the soil line and yellowing leaves are classic signs of a tree drowning in poor drainage.
Planting and watering
Choose your sunniest, best-draining spot and plant a young, container-grown or balled tree — sassafras transplants poorly once it’s mature because of that extensive taproot, so start small. Dig a hole about three times the width of the root ball and slightly shallower, set the root ball so its top sits an inch or so above grade, backfill, firm the soil, and water deeply to settle out air pockets.
For the first two or three years, water regularly to establish a strong root system — roughly a deep soaking whenever the top few inches of soil dry out, often two to three times a week in the heat of spring and summer. Once established, sassafras is notably drought-tolerant, and overwatering does more harm than too little. Mulch the root zone with a few inches of wood chips or pine needles to conserve moisture and moderate soil temperature, keeping a 2-inch gap between mulch and trunk to prevent rot.

In good soil, established sassafras rarely needs feeding. If growth is weak or leaves are sparse and pale, a balanced all-purpose fertilizer applied in late winter, supported by a soil test, will help; a higher-nitrogen formula encourages denser foliage. Pruning is largely optional. On young trees, light winter pruning can build a strong central structure; on mature trees, simply remove dead, damaged, or crossing branches to keep the silhouette clean. The one pruning job that actually matters for most gardeners is controlling suckers.
Managing the suckering and colony habit
The single most important thing to understand before planting sassafras is that it does not stay put. Its thick, fleshy roots run outward in every direction and constantly send up new shoots, or suckers. A single tree left unmanaged will surround itself with a clonal colony — a dense thicket of genetically identical stems all connected underground to the original. Root sprouts grow astonishingly fast, often 4 feet in their first year and 15 feet within four years.
This habit is exactly why sassafras forms those familiar roadside thickets, and it’s the trait the Morton Arboretum and others flag as inappropriate for some landscapes. For the home gardener it cuts two ways, so decide up front which approach fits your yard:
- If you want a single specimen tree: plan to mow or cut suckers as they appear. Suckers emerging in a lawn are usually knocked back by routine mowing; those in beds need to be severed at the base. Installing the tree where lawn or hardscape surrounds it makes ongoing control far easier. Root barriers offer limited help against such an aggressive sprouter.
- If you want a naturalized stand: let the colony develop. Sassafras makes an excellent informal hedge, screen, or wildlife thicket at the back of a property, in a hedgerow, or in a native or woodland-edge planting where spreading is a feature, not a flaw. This is arguably the most honest way to use the tree.
Two related practicalities follow from the root system. First, transplanting an established sassafras is difficult and often fails because of the deep taproot — always move young plants. Second, those same roots make propagation easy: the most reliable method is root cuttings taken in late winter or early spring (3- to 6-inch sections of healthy root, kept moist in sand until they shoot), and you can also grow it from the blue drupes’ seeds or, less successfully, by digging suckers that have formed their own roots well away from the parent.
Wildlife value of sassafras
Sassafras earns its place in a native garden as much for what it feeds as for how it looks. It is a genuine wildlife magnet across every season.
Its biggest ecological contribution is to native butterflies and moths: sassafras is a documented host plant for the caterpillars of roughly 37 species of Lepidoptera. The standout is the spicebush swallowtail (Papilio troilus), whose caterpillars feed on sassafras leaves, but the list also includes the eastern tiger swallowtail, palamedes swallowtail, pale swallowtail, and several of our largest and most spectacular giant silk moths — the cecropia, promethea, polyphemus, imperial, and io moths. Planting sassafras is one of the more effective things a gardener can do to support these insects.
The fruit matters too. Those blue-black drupes ripen in late summer and are quickly stripped by songbirds, game birds, and small mammals; birds are the tree’s main seed dispersers. Deer and other browsers feed on the twigs and foliage. The early-spring flowers offer one of the season’s first nectar and pollen sources for insects. Taken together — host plant, fruit, browse, and early nectar — sassafras supports a fuller cross-section of native wildlife than most ornamental trees of its size.
Pests and diseases to watch for
Sassafras is generally tough and pest-resistant, but a few problems are worth knowing.
The most serious by far is laurel wilt, a lethal fungal disease (Raffaelea lauricola) carried by the invasive redbay ambrosia beetle. Sassafras belongs to the laurel family (Lauraceae) and is fully susceptible; the tree’s own aromatic terpenoids may even attract the beetle. Laurel wilt has spread from Florida up through the Carolinas and into the Ohio Valley, and the disease can move tree-to-tree underground through connected roots — a particular danger given sassafras’s clonal colonies. In high-risk areas of the Southeast, management centers on keeping trees vigorous, removing infected stems promptly, and, where warranted, preventive insecticide and fungicide programs guided by a professional.
Lesser concerns include defoliating insects such as spongy moth and Japanese beetles, sassafras weevils, and large silk-moth caterpillars (the same desirable species noted above — tolerate them when you can). Root rot from waterlogged soil is the main cultural problem and is solved at planting time by choosing a well-drained site.
The root beer, filé powder, and safrole story
No tree has a stranger relationship with the American kitchen than sassafras, and the safety picture is widely misunderstood. Here is the part that actually matters before you brew, steep, or season anything.
Sassafras roots and root bark were the original flavor of traditional root beer, prized for their warm, sweet aroma. That aroma comes largely from safrole, a volatile oil concentrated in the roots and bark. In 1960 the U.S. Food and Drug Administration banned safrole and sassafras root as additives in commercially mass-produced foods and drinks, after laboratory animals given large oral doses of safrole or sassafras oil developed liver damage and cancer. Sassafras tea itself was banned in 1977; that specific ban was lifted in 1994, but the underlying caution remains. Today’s commercial root beers use safrole-free natural extracts or artificial flavoring — most often methyl salicylate (the wintergreen/black-birch flavor) — rather than raw sassafras root.
The crucial distinction for gardeners and cooks is between roots and leaves:
- Roots and bark contain safrole and are the reason for the ban. Home-brewing root beer or steeping sassafras-root tea from the wild tree means consuming safrole, which is why this is no longer considered safe; safe commercial versions have had the safrole removed.
- Leaves are essentially safrole-free and remain perfectly legal and traditional in cooking. Dried, ground sassafras leaves are filé powder (gumbo filé), the herb that thickens and flavors Louisiana Creole gumbo — a use rooted in the cooking of the Choctaw and other Southeastern peoples and central to the very origin of gumbo.
A few more facts round out the picture. Safrole is also a controlled precursor chemical for MDMA, so the isolated oil is monitored and regulated. And sassafras carried enormous historical weight long before any of this: in the 1600s its root bark was exported from the colonies to Europe as a celebrated medicinal cure-all and, for a brief stretch, was the second-largest export from British North America after tobacco. Native peoples across the Southeast used the plant for food, medicine, dye, and fire-starting for centuries before European contact.
The practical takeaway is simple. Enjoy sassafras as a beautiful, fragrant, wildlife-rich native tree; harvest its leaves for filé if you like; but skip the homemade root-bark tea and root beer, and reach for commercial, safrole-free products instead.
